制作指导
南瓜切成丝后,用水把表面的淀粉洗去,放入清水中浸泡,这样南瓜丝入锅后不容易粘锅,且口感较爽脆。
南瓜丝入锅后,马上加醋翻炒,可以起到防止粘锅的作用。
南瓜下锅后应急火快炒,如果在锅中停留时间过长,容易粘锅,且失去爽脆的口感。
